Zaatar recipe

Zaatar is a savoury middle eastern spice blend made with oregano, sumac, toasted sesame and salt.

Za’atar is a culinary staple in the Middle East we use it almost everyday especially to sprinkle on top food and mostly used on breakfast. 

The best way to make Zaatar is by using fresh oregano. Wash it and dry it, then place it on a tray for a couple of days until it is completely dry. But if you can’t find fresh oregano, use the dried one. There are different types; I used the jar from Costco business which has a strong smell and a strong flavor, and that’s what you want. You can rub the oregano leaves between your hands or you can use a food processor.

2 cups packed dried oregano 

3/4 cup toasted sesame seeds 

1/2 cup sumac or more for your liking 

2 tsp salt 

If you like Zaatar very fine use food Processor to have a smoother texture.

instructions1. If you are using fresh oregano, wash and dry it, then place it on a tray for a couple of days until it is completely dry.

2. Toast sesame seeds in a pan on the stove or in the oven. 

3. I used the dried oregano from Costco. Make sure it has a strong smell and flavor, as that’s the kind of oregano you need for making Zaatar.

4. Rub the oregano between your hands, or you can use a food processor for a smoother texture. Some prefer to add 1 tsp of olive oil to make the oregano smoother and enhance the green color.

5. Add the toasted sesame seeds, sumac, and salt on top.

6. Mix everything together. If you prefer a tangier flavor, add more sumac. If you like it saltier, add more salt.
