I love knafih and Hrisi bil ashta so I combined both recipes together and turned out so delicious!! If you are like me love both desserts you are going to love this one. * Ingredients: 200 g shredded Mozzarella cheese Oil to brush the pan Crushed Pistachios for topping Edible rose petals (optional) for decorating Simple syrup (atir) Batter mix: 2 eggs 1/2 cup sugar 1 tsp vanilla 11/2 cup yogurt 1 cup oil 11/2 cup semolina #2 (smeed hrisi) 1 tbsp baking powder Cream filling (ashta): 3 cups milk 1/4 cup sugar 1/2 cup semolina #2 2 tsp orange blossom water (mazahir) Simple Syrup (atir): 2 cups sugar 1 cup water 1 tbsp lemon juice 1 tsp orange blossom water * Instructions: 1: first start with making the simple syrup( atir) 2: in a pot add sugar and water when start bubbling lower the heat then add lemon juice and orange blossom water and let boil for another 5 minutes then remove from the heat and set on the side. 3: make the ashta by mixing together milk, semolina and sugar when start getting thick add orange blossom water and mix then set on the side to cool down.
4:in a bowl mix sugar, eggs and vanilla for couple minutes then add semolina, yogurts, oil and baking powder then mix till you get smooth batter.
5: brush a baking tray with oil then spread half the mix or little bit less
6:add the ashta on top then add some shredded mozzarella cheese
7:add the other half of the batter on top
8: Top with Slices Pistachios
8: bake at 350f for about 45 minutes or till golden color
9: take out the oven then add the simple syrup on top right away.
10: enjoy while still warm. Note: the shredded mozzarella cheese can be added before the ashta and you can use sliced mozzarella cheese instead of shredded
