In a large bowl, combine spinach, sour cream, cream cheese, mayonnaise, mozzarella, cheddar, Parmesan, garlic, salt, and pepper. Mix until smooth and well combined.
Hollow out a round loaf of bread (optional) and fill with the spinach dip mixture. Alternatively, transfer the mixture to a baking dish.
Cover with foil and bake:
In bread: 35-45minutes, until hot and bubbly.
In baking dish: 20–25 minutes, covered.
Remove foil, bake for a few extra minutes if needed until golden on top.
Serve warm with bread cubes, crackers, or chips.
Notes
Make sure to squeeze out all the water from the spinach to prevent a watery dip.
Use a mix of cheeses for the best creamy and gooey texture.
This dip is best served hot and fresh, but leftovers can be reheated in the oven or microwave.
If baking in a bread bowl, choose a sturdy loaf so it holds the dip without collapsing.
