Ingredients

  • 1 can black beans 540 ml
  • 1/2 cup corn
  • 1 small red onion
  • 1 small cucumber
  • 1 small tomato
  • 1 small sweet pepper
  • 1 avocado
  • 2 tbsp chopped parsley or cilantro or a mix of both

Dressing

  • Juice of 1 lemon
  • 1 tbsp olive oil
  • 1 garlic clove minced
  • 1 tsp salt
  • 1/2 tsp chili flakes
  • 1/4 tsp black pepper

Instructions

  • Rinse the black beans and drain them well.
  • Drain the water from the corn.
  • Dice the cucumber, tomato, sweet pepper, red onion, and avocado into very small pieces. Finely chop the parsley or cilantro.
  • In a bowl, combine the black beans, corn, and all the diced vegetables.
  • Add the salt, black pepper, chili flakes, minced garlic, olive oil, and squeezed lemon juice. Mix everything thoroughly.
  • Serve immediately with chips or as a side salad, or refrigerate until needed.

Rinse Thoroughly: Rinse the black beans and corn well to remove excess sodium and any canning liquid for a cleaner flavor.
