Buffalo chicken spring rolls

Ingredients

  • 1 lb chicken breast seasoned with salt, black pepper, and paprika or shredded rotisserie chicken
  • 1 cup shredded mozzarella cheese
  • 1/4 cup hot sauce
  • 1/4 cup cream cheese
  • 1/4 cup chopped green onion optional
  • 20 spring roll sheets
  • 2 tbsp flour mixed with 3 tbsp water for sealing
  • Green onion or chives (optional)

Instructions

  • Season the chicken breast with salt, black pepper, and paprika. Heat oil in a skillet, then add the chicken. Brown both sides, then cover and lower the heat. Once the chicken is cooked through, remove it from the skillet and shred it into very small pieces.
  • In a bowl, mix together the shredded chicken, mozzarella cheese, cream cheese, and hot sauce. Stir until everything is well combined.
  • Separate the spring roll sheets. Take a full spoon of the chicken mixture and place it in the middle of each sheet. Fold the bottom of the sheet twice, then fold in the sides and roll tightly. Brush the end with the flour and water mixture to seal.
  • Repeat until you’ve used up all the ingredients.
  • Place the rolls on a tray and freeze for an hour. After freezing, remove them from the tray and store them in a ziplock bag in the freezer. If you plan to deep fry them immediately, leave some out.
  • Heat oil in a pan on the stove, then deep fry the spring rolls until golden and crispy.
  • Once cooked, place the spring rolls on a rack to drain excess oil and maintain their crunch.
  • Serve with ranch dressing for dipping.

1. Use rotisserie chicken: If you’re short on time, rotisserie chicken is a great shortcut. It’s already cooked, so you can just shred it and move on to the next steps.
2. Freeze before frying: Freeze the spring rolls for at least an hour before frying. This helps them hold together better and prevents the filling from spilling out during frying.
3. Don’t overstuff: Be careful not to overstuff the spring rolls. A small spoonful of filling is enough to ensure they roll up nicely and fry evenly.
4. Seal with flour paste: Use the flour and water mixture to seal the edges tightly. This ensures the rolls stay closed and crisp up properly during frying.
5. Fry in batches: To avoid overcrowding the pan, fry the spring rolls in batches. This helps them cook evenly and become perfectly crispy on all sides.
6. Bake or Airfry for a healthier option: If you want a healthier alternative, brush the spring rolls with oil and bake them at 400°F for 15-20 minutes or use an Airfryer. This gives you the crispy texture without the extra oil from deep frying.
7. Try different dips: While ranch and blue cheese are classics, feel free to experiment with different dipping sauces, like spicy mayo or garlic butter, to add extra flavor.
8. Make them ahead: Prepare and freeze the spring rolls ahead of time, so they’re ready to fry when you need a quick snack or appetizer.
