Creamy crunch salad

This salad was inspired by traditional Mexican salads, but I put my own twist on it to create something unique. It’s a perfect blend of creamy, crunchy, and flavorful all in one bite! From the crisp lettuce to the rich avocado and bold nacho crunch, every ingredient works together to make this dish absolutely delicious.

Ingredients

Salad:

  • 10 leaves of lettuce
  • 1 red bell pepper
  • 1 small red onion
  • 2 avocados
  • ½ cup corn
  • 1 cup nacho cheese chips
  • ½ cup shredded marble cheese or Tex-Mex cheese

Dressing:

  • ¼ cup mayo
  • 2 tbsp yogurt or sour cream
  • 1 tbsp lemon juice
  • 1 tsp honey
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp garlic powder or 1 minced garlic clove

Instructions

  • Wash and dry the vegetables thoroughly.
  • Chop the lettuce into medium-sized pieces.
  • Cut the red bell pepper and avocados into cubes, then thinly slice the red onion.
  • In a large bowl, combine the lettuce, red onion, bell pepper, and corn.
  • Prepare the dressing by whisking together the mayonnaise, yogurt (or sour cream), lemon juice, honey, salt, black pepper, and garlic powder until smooth and creamy.
  • Pour the dressing over the salad, then add the shredded cheese and nacho chips.
  • Toss everything together until well coated.
  • For extra crunch and flavor, top with additional cheese and chips.
  • Serve immediately and enjoy!

Notes

  1. To save time, chop your veggies and store them in the fridge. This makes it easy to throw the salad together when you're ready.
  2. Fresh produce, especially ripe avocados and crisp lettuce, will make your salad taste much better. Always choose the freshest ingredients for the best flavor.
  3. You can easily customize the dressing. For extra tang, add more lemon juice; for some heat, mix in a little chili powder or hot sauce.
  4. To make the salad more filling, add protein like grilled chicken, shrimp, or black beans. This will turn your salad into a full meal.
