Date truffles are a delicious and healthy no-bake treat made from naturally sweet dates and nutrient-rich nuts. They are soft, chewy, and coated in a variety of toppings like crushed nuts, shredded coconut, or cocoa powder. Ingredients

  • 500 g fresh dates or 400g date paste
  • 1/4 cup crushed roasted almonds + more for topping
  • 1/4 cup crushed roasted walnuts + more for topping
  • 1/4 cup crushed roasted pistachios + more for topping
  • 1/4 cup crushed roasted cashews + more for topping
  • 2 tbsp roasted sesame seeds + more for topping
  • 1/4 cup shredded coconut + more for topping
  • Cocoa powder for topping

For cooking fresh dates:

  • 1/3 cup water
  • 1 tsp lemon juice
  • 1 tsp orange blossom water

Instructions

  • You can use store-bought date paste or make homemade date paste by washing 500g of pitted dates and cooking them with 1/3 cup of water over medium heat until softened. Then, mash them with a fork and add 1 tsp lemon juice and 1 tsp orange blossom water. Mix everything together and set aside to cool.
  • In a bowl, combine the date paste with roasted almonds, walnuts, pistachios, cashews, shredded coconut and toasted sesame seeds.
  • Stir well until all ingredients are fully combined.
  • Shape the mixture into small balls, then roll them in crushed nuts, sesame seeds, shredded coconut, or cocoa powder.
  • If like them more firm refrigerate for half an hour then serve

Notes

1. Use Soft Dates: If you’re using fresh dates, make sure they are soft for easy mashing. If they’re a bit dry, soak them in warm water for 10 minutes before using.
2. Chill the Mixture: If the mixture is too sticky, refrigerate it for about 15-20 minutes before rolling it into balls. This makes it easier to shape.
3. Custom Toppings: Experiment with different toppings like chia seeds, goji berries, or even a sprinkle of sea salt for a unique twist.
4. Add Flavor Variations: For extra flavor, try adding a pinch of cinnamon, cardamom, or cocoa powder directly into the mixture.
5. Make Mini Truffles: If you want smaller portions, roll the truffles into mini bite-sized balls for a more snackable option.
6. Storage Tips: Store truffles in an airtight container in the fridge for up to two weeks, or freeze them for up to three months for longer shelf life.

8. Use a Food Processor: To save time, pulse the nuts and dates in a food processor until finely chopped and well-combined before shaping them into truffles.
