Ingredients

24 mini tart shells (pre-made or homemade)

2 cups heavy whipping cream

1 can sweetened condensed milk (divided)

8 oz cream cheese (softened)

Fresh fruit (berries, kiwi, etc.)

Caramel sauce (store-bought or homemade)

Instructions

1: Preheat the oven to 375°F (190°C). Place the mini tart shells in a baking tray and bake according to the instructions on the mini tart shell package. Set aside to cool completely.

2: Prepare the filling: In a mixing bowl, whisk together 2 cups of heavy whipping cream and half of the can of sweetened condensed milk (about 7 oz). Whisk until the mixture becomes light and fluffy, forming soft peaks.

3: Add cream cheese: Once the whipping cream mixture is fluffy, transfer it to a separate dish. Add the softened cream cheese and the remaining sweetened condensed milk (about 7 oz). Whisk until smooth and fluffy.

4: Combine the mixtures: Add the whipped cream mixture back into the smooth cream cheese mixture and whisk gently for just a couple of seconds to combine. Be careful not to overmix.

5: Prepare the piping bag: Transfer the cheesecake filling into a piping bag. Set it aside, or place it in the fridge until you are ready to fill the tarts.

6: Cool the tarts: Once the mini tart shells have cooled completely, proceed to the next step.

7: Assemble the tarts: Fill each mini tart shell with the cheesecake filling from the piping bag. Top with fresh fruit, such as berries, kiwi slices, or your preferred fruits. Drizzle with caramel sauce for extra sweetness and richness.

8: Chill before serving: Place the filled tarts in the fridge and let them chill until you’re ready to serve. This will help the cheesecake filling set and make them easier to handle.
