Grilled Cajun chicken sandwich is one of my favorite chicken sandwiches to make. It’s full of flavor, yet so easy to prepare.
Chicken breasts tend to get dry easily, especially if overcooked. To achieve the juiciest chicken breast, brine it in water and salt before use. This helps to ensure a juicy and tender result. I typically brine the chicken for about 1 hour, but you can brine it for longer if desired.

✨Ingredients ✨
– 1 kg chicken breasts (about 4 to 5 chicken breasts)
– Enough water to cover + 2 tbsp salt for brine
– 1/4 cup vegetable or olive oil
– Brioche buns
– Sliced tomatoes
– Lettuce
– Mayonnaise
Seasoning:
– 2 tbsp paprika
– 1 tbsp garlic powder
– 1 tsp onion powder
– 1 tsp cayenne pepper
– 2 tsp salt
– 1/2 tsp black pepper
– 1 tsp thyme
– 2 tsp oregano
✨Instructions✨
1. Brine the chicken breasts in cold water and salt for at least 1/2 to 1 hour.
2. Remove the chicken from the water and pat dry.
3. Cut each chicken breast in half.
4. Mix all the mentioned seasonings, then add them to the chicken.
5. Add oil and mix everything together.
6. Preheat the grill to 400°F, then add the chicken and cook for about 4 minutes on each side, totaling 8 minutes.
7. Remove the chicken and start assembling by adding mayonnaise, followed by the chicken, tomato, and lettuce.
This grilled Cajun chicken recipe can be made with side of salad or mashed potatoes.
I like to cut the chicken breast in half because I like thin chicken and it cook faster when it’s thin but if you like the chicken thicker don’t cut it in half and cook it for longer for about 15 minutes time.
This recipe can be cooked in the air fryer at 400f in the middle rack for about 7 minutes or in the pan on each side for about 3 to 4 minutes.
