Jam bars (mabrousheh) مبروشه بالمربى

Mabrousheh is a Middle Eastern jam bars that melt in your mouth, filled with a jam center. It’s incredibly easy to make and absolutely delicious!

Those jam bars were one of my favourite childhood desserts. My mom used to make them all the time, and my siblings and I loved them, especially when she made them with strawberry jam – our favorite. She used to prepare them each time with different kinds of jam, including homemade apricot, cherry, and fig jams from the trees in our garden. Imagine how delicious they tasted!

The nice thing about those jam bars is that you can use any kind of jam that you like or have. I had blueberry jam that no one was eating, so I used it, and the kids loved it. It was a great way to use up my jam that no one was eating.

This recipe freezes well. When you need some, just take it out and let it defrost; it will taste as fresh as when it was made.

“Dough:

  • 3 cups flour
  • 3/4 cup sugar (or slightly less)
  • 1/2 cup oil
  • 1/2 cup melted butter
  • 2 eggs
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla sugar or 1 tsp vanilla extract

‘’filling:

  • jam (any kind you have or like)

1. In a bowl, mix eggs, sugar, and vanilla sugar. Then, add in oil, melted butter, salt, and baking powder. Mix together, and slowly add the flour. Continue mixing until a soft dough forms.


2. Take out approximately 1/4 of the dough, or a little bit less, to use for the topping.

3. Brush the tray with butter or oil.

4. Flatten the dough evenly in the prepared tray.

5. Top the flattened dough with jam.

6. Shred the reserved portion of the dough on top.

7. Bake at 360°F for about 30 minutes or until golden in color.

8. Remove from the oven and let it cool down. Then, cut into squares.

9. Store in a tightly closed container on the counter for up to 1 week, in the fridge for up to 1 month, and in the freezer for up to 6 months.
