How to Make Eggplant & Cauliflower with Tahini Sauce

  1. Cut the eggplant into even, thick slices and arrange them on a clean surface. Sprinkle both sides with salt and let them sit for a few minutes.

Use paper towels to gently press the eggplant and remove the excess moisture.

Lightly coat each slice in flour and set aside.

2. Prepare the cauliflower

Cut the cauliflower into small, bite-sized pieces. Keep the center/core of the cauliflower mostly intact so you can place it in the middle of your serving platter.

Wash the cauliflower well and make sure to dry it very thoroughly before frying.

3. Prepare the cauliflower center

Place the whole cauliflower center in a microwave-safe dish and microwave for about 10 minutes, or until softened.

This helps cook the center through before frying.

4. Fry the vegetables

Heat the oil in a deep pot or deep fryer.

Once the oil is hot, carefully fry the eggplant slices until golden brown and crispy. Remove and place on a paper towel-lined plate to drain.

Fry the cauliflower pieces until golden and crispy as well.

Finally, carefully fry the softened cauliflower center until golden on the outside.

Tip: Work in batches and don’t overcrowd the oil. This helps the vegetables stay crispy.

5. Prepare the toppings

While the vegetables are cooking, chop the parsley and dice the tomatoes.

Toast the pine nuts in a dry pan over medium-low heat until lightly golden and fragrant. Keep an eye on them because pine nuts can burn quickly.

Prepare the pomegranate seeds if using.

Add the tahini, water, freshly squeezed lemon juice, minced garlic, and salt to a bowl.
